Vegetable Soup Recipe

I really enjoy making vegetable soup because it's so easy and quick. All I need are fresh veggies, tasty broth, and some herbs. vegetable soup is always making me feel better when I have a cold (of course by adding a lot of chili to my soup) because I enjoy that extra kick of spice. 

So whenever I'm in the mood for something simple, soothing, and delicious, vegetable soup with a hint of chili is my go-to choice.

Ingredients:

  • 3 cloves garlic, minced
  • 1 stalk scallion, chopped
  • 1 stalk celery, chopped
  • 1 carrot, peeled and sliced
  • 1 potato, peeled and cubed
  • Salt and pepper to taste
  • Chicken broth (enough to cover the vegetables)

Instructions:

  1. In a large pot, heat a small amount of oil over medium heat. Add the minced garlic and sauté for a minute until fragrant.

  2. Add the chopped spring onion and celery to the pot. Sauté for another 2-3 minutes until they begin to soften.

  3. Add the sliced carrot and cubed potato to the pot. Stir everything together.

  4. Season the vegetables with salt and pepper according to your taste. Mix well to distribute the seasoning.

  5. Pour enough chicken stock into the pot to cover the vegetables completely. Bring the mixture to a boil.

  6. Once boiling, reduce the heat to low and let the vegetables simmer for about 15-20 minutes, or until they are tender.

  7. Once the vegetables are cooked to your desired tenderness, remove the pot from the heat.

  8. Serve the vegetable medley in bowls, ladling some of the flavorful chicken stock over the vegetables.

Enjoy your delicious and nutritious vegetable medley cooked in flavorful chicken stock! It makes a delightful side dish or even a light and comforting main course.

Note: If you don't have chicken broth, don't worry! You can simply use water and chicken stock cubes instead. And remember, you're not limited to the vegetables listed above. Feel free to add any other vegetables that you enjoy.
